Vivacious Molly's Vibrant Eats - On 12th, near the corner of Fairview Ave SE in Salem, OR

This place is fantastic - some of the funnest, most unique food in Salem, and delicious too.

The Bulgogi Wraps were great, a marinated treat that never disappoints.

The Mahi Mahi Wraps were fantastic - the tomatoes, mango, poblano pepper, and the red onion, with the cilantro and lime all teamed up and  really drew out the flavor of the Mahi Mahi.

The Shrimp and Green Onion Pancake was fantastic as well - the dense pancake was more like a crepe, and the sweet richness of the shrimp combined with the green onion contrasted wonderfully with the earthy richness of the zucchini and carrots, it blew my taste buds away.

Greg, the guy that runs this food cart, has been in the business for about six years. He used to have a food cart over by Home Depot near the intersection of Lancaster and Hwy 22. This food cart is open from 11:00 am to 2:00 pm everyday but Sunday (unless the weather is extreme).

Yes, the menu is limited, but that is typical of any food cart. I had the Philly Cheesesteak Sandwich and I enjoyed it very much. Greg opens the bun and grills it face down and then loads it with steak, cheese, sautéed onions, and mayonnaise. It's a simple but delicious combination and he does it very well. The sandwich is perfect for lunch - it left me full but not so full that I needed a nap. I recommend this food cart.

Taqueria La Guadalupana (Food Cart) - On Portland Rd in NE Salem, OR

There are several Mexican food carts in NE Salem. This one wasn't bad, but there is definitely a lot better. It's located in the parking lot of Stuart's Discount Auto Parts. It's pretty far north on Portland Rd, near the intersection with Hyacinth St, on the east side.

I had a Taco de Pastor and a Torta de Milaneza, neither of which were all that great. The thing I tasted most on the Torta was the refried beans. It should have been the meat.

As far as service goes, the guy wasn't rude, but he wasn't exactly friendly either. Overall, the experience was mediocre, at best.

Thermopylae Gyro & Souvlaki Sandwiches - On Commercial St SE in Salem, OR

It's so nice to see some food carts in Salem. I really hope that the economy-killing bureaucrats don't suffocate them with red tape. The Gyros are delicious and probably the best in Salem. The guy running the place was nice and the food was reasonably priced. He charged me for some "extras" that some places might not, but the total was still reasonable.
